Sweet potato nachos (whole30/paleo)

I love nachos with corn chips, spicy minced beef, guacamole and sour cream, talk about the best comfort food. But as you know, I’m currently doing my second round of whole30 which means corn chips and sour cream are soooo OUT.

Anyway, the other day I decided to experiment with using sweet potato chips instead of corn chips. Oh my, it took nachos to a whole new level of yumness. I’m not kidding y’all, everything came together in a beautiful and delicious harmony.

You have a bit of sweetness from the potatoes, spicyness from the beef and a bit of tanginess from the guacamole. Boom,  flavour explosion.

Ingredients

Sweet potato chips
2 large sweet potatoes
1 tbsp olive oil
Salt

Minced beef
500g ground beef
1 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 tsp paprika
1 tsp dried parsley
1 tsp red pepper flakes
1 tbsp tomato paste
1 can diced tomatoes
Salt and pepper, to taste

Guacamole
1 Avocado
Juice of 1/2 lime
1 tsp red pepper flakes
Salt and pepper

Method

Preheat the oven to 375F and line a baking tray with parchment paper. Peel sweet potatoes and thinly slice, using a sharp knife or a mandolin if you own one.

Place the sliced sweet potatoes on the lined baking tray, drizzle with olive oil and sprinkle some salt. Toss everything together and line them in a single layer.

Bake in the oven for 10 – 15 minutes, then turn the chips over and bake for a further 10-15 minutes. Make sure to keep a close eye on the chips, they burn very quickly I learnt that the hard way.

While the potato chips are baking, get started on the minced beef (Don’t forget the chips). Heat olive oil in a large pan over medium heat. Add the ground beef and cook for about 5 minutes until browned.

Add the onion and garlic and cook for a further few minutes, stirring regularly. Add the tomatoes, tomato paste, and the spices and stir well to combine. Reduce the heat and simmer for about 15-20 minutes, stirring regularly. Season with salt and pepper to taste.

To make the guacamole, simply mash the avocado with a fork, and add lime juice, red pepper flakes, salt and pepper and combine well.

Assemble everything in a bowl. Enjoy
