Blueberry and tofu smoothie

I’ve learnt something new today, that tofu isn’t just good for stir-fries but it’s also great in smoothies. A serving of tofu has about 12g of protein and around 120 calories. And the best part is that it doesn’t have that disgusting aftertaste that most protein powders have. It gives the smoothie a silky and creamy texture, and it leaves you feeling fuller for longer without the extra calories.

How did I stumble on this genius idea? Well, I was after a high protein low calorie breakfast, and apart from eggs I couldn’t think of anything else. But then tofu came to mind, and I already had some on hand and thought I would try adding it to my smoothie. I did, and I was quite pleased with the outcome. Tofu being tasteless, it made no difference to the taste but gave the smoothie that beautiful silky texture.

It was so filling that I had no room for lunch that I just snacked on some kale chips. To get you started, here’s a 5 ingredient tofu smoothie.

Tofu and blueberyy smoothie

Ingredients

125g tofu
1 cup blueberries
1 Tablespoon peanut butter
1 banana
250ml almond milk
1 date (optional for added sweetness)

Method

Add everything to a blender and blend until smooth.
