Quinoa egg scramble

I love quinoa, I love eggs, I love kale, and I love feta cheese and the four together make a delicious, nutritious and easy breakfast or lunch or even dinner. I’m excited to share this quinoa egg scramble recipe with you all. The addition of greek yoghurt gives the eggs a nice texture and beautiful flavour (I normally add a dash of milk to the eggs when making scrambled eggs but on this occasion I was out of milk so I opted for greek yoghurt and the result was great). Well, I hope you enjoy this recipe.

Quinoa egg scramble

Ingredients

4 eggs
1/2 cup cooked quinoa
1 Tablespoon Greek yoghurt
Cherry tomatoes
Kale
Feta cheese
1 teaspoon olive oil
Onion powder
Garlic powder
Salt and pepper

Method

In a bowl, whisk the eggs, yoghurt, garlic powder, onion powder, dried parsley, salt and pepper. Heat oil in a large pan, and cook the kale until it’s soft about 2 minutes. Add the cherry tomatoes and cook for a further 2 minutes.

Pour the egg mixture over the vegetables, and cook until the eggs are set, stirring continuously .

Lastly, add in the feta cheese and quinoa and mix everything through. Season to taste and serve. Enjoy
