This bowl is delicious, nourishing, satisfying and packed with healthy living probiotics essential for gut and digestive health. This is my kind of food, I could seriously eat this every single day. If you haven’t tried fermented foods, you are truly missing out.
I mixed red rice, quinoa and brown rice, and added red cabbage sauerkraut, fermented beetroot and cauliflower, avocado and finished it off with a squeeze of lemon juice. I hardly use dressing but if you wanted you could totally add some to this bowl. You could also chuck in a bit of protein; chicken, fish, tofu or tempeh. If you don’t have fermented vegetables, you can add sautéed kale/cabbage along with other steamed vegetables.
- 1 cup cooked brown/red rice and quinoa mix
- 1 avocado, sliced
- Fermented vegetables, (sauerkraut, beets, cauliflower)
- Garlic salt and pepper to taste
- Add everything to a bowl, mix it all up and season to taste. I like to finish with a squeeze of lemon juice for that extra tanginess.
