I could get used to eating the whole30 way, it’s actually not as bad as I thought it would be. I’m enjoying all the food. Yes, I miss carbs but I’m not craving them as much. I love how the food makes me feel, no bloating after meals or waking up with a sore tummy because of something I ate the previous night. I also love how it’s making me much more creative in the kitchen and mindful of what I eat.
Anyway, the other morning it was so cold and all I wanted was some hot porridge to warm me up. So I came up with the idea of sweet potato porridge and ran with it and whipped up this monkey breakfast bowl. It was delicious, and a big hit with my kids. It was a combination of a baked sweet potato mash seasoned with a little bit of salt and cinnamon, topped with banana, blueberries, almonds and almond butter for that delicious nutty goodness. It’s grain, dairy and sugar free, and paleo and whole 30 approved.
How come no-one ever told me how good almond butter is? The best nut butter ever! I love almonds but I never thought of trying almond butter until this week when I decided to buy it since peanut butter is out on the whole30. I don’t know if I can go back to peanut butter. However, it carries a hefty price tag. A small jar is $8 so might need to look into making my own.
1 sweet potato, baked and mashed
1/4 cup blueberries
1 Tablespoon almond butter
A handful of almonds
Salt and cinnamon, to taste
To bake the sweet potato, preheat the oven to 375F. Wash the sweet potato, and poke holes and wrap it with foil. Bake for about 45-60 minutes, the timing really depends on the size of your sweet potato.
I love wrapping it with foil because it gives you that beautiful steaming effect. If you are short on time, you can simply boil or microwave the sweet potato or you could bake it the night before and heat it up the next morning.
When the sweet potato is nice and soft, mash it and season with salt and cinnamon.
Add the sweet potato mash to a bowl, and top with fruits, almonds and almond butter. You could also add a dollop of yoghurt and drizzle with honey.
