Lemon cheesecake overnight oatmeal

I love everything about this breakfast; healthy, creamy, lemony, peanut buttery and scrumptious.

Lemon cheesecake overnight oats


1/2 cup oats
2 teaspoon chia seeds
1 Tablespoon shredded coconut
1 teaspoon honey
1/2 cup vanilla almond milk
1/2 cup greek yoghurt
1/2 teaspoon vanilla
1 teaspoon lemon rind
1 Tablespoon peanut butter
Mixed berries


In a mason jar, add oats, milk, yoghurt, chia seeds, honey, vanilla and coconut, mix well. Seal jar with lid and chill overnight in the fridge. In the morning, transfer to a bowl and top with peanut butter and berries.
