Gut-Healing Bowl with Turmeric Sweet Potato and Sauerkraut

A delicious gut-healing bowl featuring turmeric sweet potato mash, avocado, sauerkraut and tahini. The perfect healthy lunch/dinner, quick, flavourful and packed with probiotics. 

If you haven’t noticed, I love bowl meals. You basically just throw whatever you want into a bowl and call it lunch/dinner. It’s a great way to use up leftovers. It took me about 5 minutes to put this bowl together (used leftover sweet potato). I chowed it down all cozied up on the couch; watching a movie with hubby. It was the perfect way to end the weekend.

Gut Healing Bowl with Sweet Potato mash, avocado and sauerkraut

A delicious gut-healing bowl featuring turmeric sweet potato mash, avocado, sauerkraut and tahini. The perfect healthy lunch/dinner, quick, flavourful and packed with probiotics.

Ingredients

  • 1 large sweet potato
  • 1/2 teaspoon turmeric
  • 1 avocado
  • Sauerkraut
  • Pepitas
  • Tahini
  • salt

Instructions

  1. Bake, boil or microwave the sweet potato. I love it baked. I bake it the night before and heat it up the next morning.
  2. When sweet potato is cooked, mash it up and season with salt and turmeric. Slice or mash the avocado and sprinkle a little salt.
  3. To assemble, add the sweet potato mash, avocado and sauerkraut into a bowl. Top with pepitas, chilli flakes and tahini.
  4. Serve and enjoy
