Egg, beetroot and feta salad

I love salads, they are so easy to prepare and extremely versatile. You can add just about anything to a salad, and you can have it on it’s own or as a side dish.


2 boiled eggs, peeled and halved
1 beetroot, sliced (used fermented)
1/2 medium sized avocado, sliced
1 tomato, sliced
2 handfuls green salad mix
1 small cucumber, sliced
1 Tablespoon crumbled feta
Honey-vinegarette Dressing: 1 teaspoon mustard
1 Tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon honey
1 teaspoon apple cider vinegar
Salt and pepper to taste
Combine the dressing ingredients and give it a good mix, season to taste.
In a medium bowl or plate, layer the salad mix and top with tomatoes, cucumber, beetroot, avocado and eggs. Drizzle the dressing over salad, and sprinkle with feta cheese.
