The whole30 has completely changed my eating habits, and has made me venture outside my food comfort zone. I have tried so many different foods and I’ve really enjoyed it. Before the whole30, I hated the idea of cauliflower rice. Then I finally gave it a go, and I loved it. The other day my husband saw me eating it and he thought I was cheating on my whole30.
It’s delicious on its own but it also goes beautifully well with stews, stir-fries and curries. I love a big bowl of this for lunch or paired with a protein for dinner.
Here’s my recipe for cauliflower rice with kale.
1 head of cauliflower, grated
1 small bunch of kale, ribs removed and leaves shredded
1 Tablespoon olive oil
Salt and pepper to taste
Rinse cauliflower. Cut into quarters then grate in a large bowl or use a food processor and pulse until cauliflower is the size of grains of rice.
Heat olive oil in a large non-stick pan. Add kale and cauliflower rice and cook for about 5 minutes or until tender.
Season with salt, garlic powder, onion powder and pepper. Top with some walnuts and serve.
