Butter beans with spinach and sun-dried tomatoes

Ingredients

1 Tablespoon olive oil
1 small onion, finely sliced
2 garlic cloves, minced
1 can of butter beans, drained and rinsed
2 handfuls spinach
1 tablespoon tomato paste
1/4 cup water
1 cube of vegetable stock
1/4 cup sun-dried tomatoes
Salt and pepper to taste

Method

Heat oil in a small pan over medium, and cook onion and garlic over low heat until it’s soft.

Add the butter beans, water, tomato paste and stock, bring to a boil stirring occasionally for about 2 minutes.

Mix in spinach and sun-dried tomatoes, season to taste with salt and pepper.

Serve on toast.
