I love making sushi at home, it’s easy, cheap and healthier. I thought I would share one of my favourite sushi recipes with you today. It is 100% vegan, and uses brown rice, sauerkraut and avocado.
1 cup cooked brown rice
red capsicum, sliced
salt and pepper.
In a bowl, mash the avocado and mix in the brown rice (this makes the rice sticky).
Place a sushi mat on a cutting board and top with nori sheet shiny side down. Evenly spread the rice over the nori sheet.
Arrange spinach, sauerkraut and capsicum on top (don’t overfill), you could also add meat or whatever you like. Now it’s time to roll it up and cut.
Drizzle with soy sauce and enjoy.
