Black-eyed beans with kale, and quinoa

I love adding simplicity to my meals, I don’t like using too many ingredients in a single meal. Quick, simple and delicious is what I aim for. The secret is really knowing how to use herbs and spices and what goes well together. When you know how to use them well, you can enhance the flavour of any food. Experiment and discover the joy of using herbs and spices and start enjoying food more.

Black-eyed beans with kale and quinoa copy


400g can of black eyed beans, drained and rinsed
1 bunch of kale, shredded
2 Tablespoon olive oil
2 boiled eggs, halved
Quinoa, cooked
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Juice of 1/2 a lime
salt and pepper


In a bowl, combine kale, half the oil, paprika, garlic powder and lime juice. Massage the oil and spices into the kale for a few minutes, set aside.

Heat oil in a pan, add beans and cook for a 2 minutes. Add quinoa, and kale and mix well. Season to taste.

Serve topped with boiled eggs, and a squeeze of lemon juice.
