Two more sleeps before the big move to our new house. I’m so excited but I wish I could skip all the packing, cleaning and unpacking. I still got so much to do. This morning I couldn’t afford to spend too much time in the kitchen, so I quickly whipped up this toast using avocado and some left-over black beans. It was the perfect on the go breakfast and quite filling too.
1 small avocado
2 slices of bread
1/3 cup black beans
Salt and pepper to taste
Mash the avocado, squeeze a little bit of lemon juice and season to taste.
Spread the avocado on the slices of toast, top with black beans, lemon juice, salt and pepper and chilli flakes. You could also drizzle a little bit of olive oil. I added a little bit of turmeric-pineapple sauerkraut for some extra zingy and crunchiness.
Serve and enjoy.
