Beetroot Omelette

I don’t often cook with beetroot but I thought since it’s in season I would buy some and get creative with it. So I came up with this beetroot omelette recipe and it is the best omelette I have ever had. I think that’s my breakfast done for the next month or so. Am I the only one who does that? When I have stumbled on a delicious dish that I love, I can have it every day for weeks. This breakfast was truly out of this world, adding that beetroot gave the omelette this beautiful heavenly sweetness. I’m telling you, gotta try this y’all.

Ingredients

3 eggs, lightly beaten
1 medium sized beetroot, grated
A handful of spinach
salt and pepper to taste
Feta cheese
Avocado

Method

Preheat grill to high. In a small bowl, lightly beat the eggs and season to taste.

Heat oil in a oven safe pan over medium heat, add beetroot and cook for about 30 seconds. Add the eggs, and swirl around the pan evenly and let it cook for a few minutes.

I don’t like my omelette runny so I placed it under the grill for a minute to set. Top with spinach, feta and serve with avocado. Enjoy
